Did you know the Nutri-Grain Bar slogan is “Take Care of You”? I guess Kellogs didn't get the memo that soy, corn syrup, corn starch, and “enriched” flours are really hindering your well-being rather than “taking care of you.”

I'm not usually one to bash commercial food items sold in mass amounts at grocery stores, but after making a Paleo and SCD remake of these ever-popular bars, I can't help it! I haven't eaten one myself in over 10 years, but these bars were frequently a component of our school lunches. My mom didn't know any better at the time and bought into the “Nutri” part of the name thinking she was feeding us nutritious food. No wonder I have a digestive disease! Just kidding Mom, it's not your fault. Love you.

Spinach Artichoke Quinoa Casserole


I love quinoa casserole because it is quick. If you are trying to eat less meat this spinach artichoke casserole recipe along with black bean quinoa casserole is for you. It is hearty, filling and full of flavors. I used an entire box of pre-washed baby spinach. I truly love the convenience of washed organic greens. Spinach shrinks a lot, so don’t be scared by the amount this recipe calls for.

And please don’t judge my pot. It is my favorite Lagostina pot which outside goes bonanza in a dishwasher. And who can give up a dishwasher?!

Blanched French cut green beans
1 can of artichokes
1 can of hearts of palm
Sliced roasted red peppers
Black olives
1 can of cannellini beans
2 cans of chunk white tuna on top
Some chopped fresh herbs; parsley, thyme, oregano and basil.

Balsamic vinegar

Homemade Entenmann’s Mini Chocolate Donuts

Just 35 calories each… including the frosting!

Entenmann’s Mini Chocolate Cake Donuts have been on my “healthy makeover” list for a long time. Growing up, they were always one of my favorite junk foods, and on more than one occasion I tried to sneak them into my mother’s grocery cart when she wasn’t looking.

Sadly, those store-bought chocolate donuts are far from healthy with their 42 ingredients (forty-two?!), the first of which is partially-hydrogenated shortening.

Additionally, each Entenmann’s mini donut includes high fructose corn syrup, polysorbate 60, artificial colors, artificial flavors, and preservatives. Not exactly a healthy breakfast…
