Instant Pot Healthy Chicken Pot Pie (Paleo, Whole30)

Instant Pot Spicy Refried Beans

Refried beans make a very affordable meal to take to a friend if you want to spread the Instant Pot love! Who doesn’t love a good build your own Tostada bar?

There are so many different variations. For a super simple version, I add pinto beans, homemade vegetable broth, minced onion, cumin, cayenne, and salt (add a little bit of leftover jalapeño juice from a jar of pickled jalapeños for an extra little something!). They’re so easy and super delicious!

Butternut Squash

You’ll want a small to medium butternut squash that can fit in your Instant Pot. When I was taking photos for this post, my butternut squash ended up being a little too big, so I just cut the top and bottom off so it would fit.

Use your trivet and pour 1 cup of water into the Instant Pot. Place the whole butternut squash in the Instant Pot.

Frozen Chicken with rice and carrots

How many times have you reminded yourself to take the chicken out of the freezer only to discover that, after you started doing 10 other things, you totally forgot? For me, more often than I’d like to admit.

I have written about cooking chicken from frozen in a post aptly named How to Cook Chicken Breasts from Frozenand one for Chicken Parmesan Using Frozen Chicken Breasts. Both of these recipes use the oven.  The cooking times are based upon information from the USDA. Basically, it says you need to add about 50 percent more cooking time.

So when I am crunched for time and need to get a meal on the table in less than30 minutes, I now go to my favorite appliance, my Instant Pot. This updated electric pressure cooker brings an ease to the kitchen that even surpasses the slow cooker, in my humble opinion :)

This recipe is quickly becoming one of my favorite one-pot meals made in the Instant Pot. Everything for a complete meal ready in less than 30 minutes.
