
MOBOCES is once again hosting the
New York State Education Department Professional Cooking Program during July, to support the continuing education of school food service workers and managers from across the state.
Professional Cooking is a series of four-day professional development workshops intended to help school food service programs operate more effectively by reinforcing proper techniques and best practices in the kitchen and business office. The program also allows
school food service professionals to expand their menu repertoire by demonstrating a variety of new and exciting dishes that meet nutrition requirements, and can be prepared with ingredients already available to school kitchens.
Each week, 50 food service professionals work in our on-campus teaching kitchen. On Wednesdays, they put out a variety of dishes they have prepared for our staff to sample. Food from the kitchen is also donated to the
Rome Rescue Mission each day.
